Clover Exclusive: Winning Milk Tart Recipe
Ingredients
Tartcrust
1 cup (125g) cake flour
1 egg
3 tsp baking powder
¼ cup Clover Mooi River Butter
½ cup sugar
Salt
For the Filling
2 L Clover Fresh Full Cream Milk
300g Clover Mooi River Butter
4 cups sugar
12 eggs, separated
1 tsp vanilla essence
8 tbsp cornflour

Voorverhit oond tot 200 °C
1 Meng botter en suiker, voeg eier by en meng goed.
2 Voeg koekmeel, bakpoeier en sout by. Meng goed en voeg bietjie melk by as mengsel te styf is.
3 Versprei deeg met teelepel in foeliepan of keramiektertpan.
4 Bak vir 10-15 minute.
Vulsel
5 Kook melk, botter en suiker. Meng eiergeel, mielieblom, vanielje en sout. Voeg klein bietjie water by as mengsel te styf is.
6 Klits eierwitte tot stywepuntstadium.
7 Sodra melkmengsel kook, roer eiergeelmengsel by. Kook vir ±3 minute terwyl jy heeltyd roer. Sit plaat af en los pot op stoofplaat. Vou eierwitte in mengsel in.
8 Skep mengsel (met soplepel) in tertkors. Strooi kaneel oor.
9 Laat 1 uur afkoel en sit voor.
Method
Tartcrust
Preheat oven to 200°c
1 Mix butter and sugar, add egg and mix well.
2 Add cake flour, baking powder and salt. Mix well, if mixture is to stiff, add a little bit of milk.
3 Spread in foil tart pan or ceramic pie dish with teaspoon.
4 Bake for 10–15 minutes.
Filling
5 Boil milk, butter and sugar. Mix egg yolk, corn flour, vanilla essence and salt. Add a little bit of water if mixture is too stiff.
6 Beat egg white until stiff peaks form.
7 As soon as milk mixture boils add the egg yolk mixture. Boil for ±3 minutes, keep stirring. Switch stove off and leave saucepan on stove plate. Fold egg whites into mixture.
8 Scoop the mixture (with a soup ladle) into the tart crust. Garnish with cinnamon.
9 Leave for 1 hour to cool and serve.
